Gingerbread Loaf

Today’s adventure is in the kitchen! 

This adventure was just before Christmas! Requests for this recipe came in after my photo prompt for December 22 (Date Nut Day). I made Gingerbread Mini Loaves instead, in keeping with the holiday spirit!

This is a copy-cat recipe of Starbuck’s famous Ginger Loaf. It is also a versatile recipe can be made into a single loaf, six mini loaves or twelve muffins, whatever your needs are.

I first gather all the ingredients together. It helps me stay organized. I also like to gather all the tools & equipment needed. It is just more efficient. Then preheat your oven and grease your baking pans.

You start by creaming the butter & sugar together. Add the egg and vanilla and stir to combine. Then blend in the applesauce.

Sift together the dry ingredients; add to the wet ingredients slowly and stir until just incorporated. 

Then add the batter to your prepared pans and bake until a toothpick inserted comes out clean.

Note: Baking times are approximate here as ovens can vary greatly.

The holidays are a time for excess, so instead of frosting, I dusted them lightly with icing sugar. They were still delicious, and even hubby (of the famous sweet-tooth) didn’t miss the extra sweetness.

    I have a gingerbread muffin recipe which I like but don’t love. I’m inspired to give this one a try. Thanks for sharing! (and I definitely like the idea of powdered sugar versus the frosting) (also, what a great mini loaf pan!)
